As much as I enjoy online recipes, I still prefer those handwritten by my mother on cards, dishes I loved to watch her cook. Nothing makes me happier than spending an afternoon experimenting with these old creations, and my new ones, in my cozy kitchen.
Here are a few family favorites that I make on repeat during summer. Most are healthier versions of traditional recipes — with the exception of the dessert I've included. Life is short so let us eat chocolate!
Eggplant and Olive Tapenade
I'm a huge olive fan, and this easy appetizer is light and refreshing — a perfect start for outdoor dining.
Makes 4-5 cups
- 2 large, firm eggplants
- 4 cloves garlic, minced
- 1 cup pitted Kalamata olives, drained
- 1 cup pitted green olives, drained
- 1 tablespoon lemon juice
- 1/4 cup extra virgin olive oil
- Salt and pepper to taste
- 2 long baguettes, sliced into rounds and toasted (or use pita chips for serving)
Preheat oven to 400. Prick eggplants all over with a fork and bake for 30-40 minutes (or until they start to collapse). Let eggplants cool, then peel, seed, and cut them into large chunks. Add eggplant, garlic, and olives to a food processor — pulse several times to break down the ingredients. While the food processor is running, drizzle in olive oil and lemon juice. Blend until it reaches desired consistency — chunky or smooth. Serve with toasted slices of baguette or pita chips. *The tapenade can be chilled or served at room temperature.
Beet Salad With Arugula and Goat Cheese
The mix of sweetness from the beets, coupled with peppery arugula, creamy goat cheese, and crunchy pecans, is a delicious blend of all the flavors I crave in a salad.
Serves 6
- 5 medium-sized beets, cooked, peeled, and chopped into bite-sized chunks
- 6 cups fresh arugula, washed and drained
- 3/4 cups crumbled goat cheese (or feta)
- 1/2 cup pecans, toasted and chopped
